Ingredients
1 package Garlic Whole Wheat Linguini
1 can white beans, drained and rinsed
1/4 cup olive oil
2 cups baby spinach
1/2 cup grated parmesan
Salt and pepper, to taste
Instructions
Cook the linguini according to the package directions above; reserve 1/2 cup pasta water before draining.
While the pasta cooks, warm the olive oil in a large skillet over medium heat. Add the white beans and cook 3–4 minutes, until warmed through and starting to crisp slightly.
Add the spinach and cook until just wilted, about 1–2 minutes.
Add the drained pasta to the skillet with a splash of pasta water, tossing to combine. Season with salt and pepper.
Top with parmesan and serve immediately.
